Elderflower, rose and lemon cordial

Try a little kitchen alchemy as a simply way to introduce others to the health benefits of herbs.

Capture summer in a bottle. You can also freeze this to enjoy with friends whenever.

Ingredients

Approximately 30 heads of Elderflowers depends on size
1.5 litres of boiling water
500g / 1 kg unrefined golden caster sugar
4 unwaxed organic lemons, sliced
Rose petals from 4 fragrant roses

Method

 1. Add sugar to water, stir until  to dissolved, allow to cool.
2. Add lemons, elderflowers and rose petals, stir to incorporate.
3. Cover and leave to infuse for 24-48 hours.
4.Strain through fine muslin cloth or equivalent.
5. Heat gently to a simmer and cook for a few minutes.
6. Pour through a funnel into sterilised bottle add lid and label.
