No bake delight

Recipe from Barbara Wilkinson, Herb Society Chair

Autumn calls us to make the most of seasonal fruits and nuts.
Here’s a simple way to create healthy, tasty treats to satisfy our need for comfort.
No measurements involved, make this the way you prefer.

Ingredients

Good quality, soft dates (medjool)
Almond butter
Chocolate
Dried fruit and nuts, such as goji berries or chopped pistachios – colour is good.

Method

1. Remove stones from the dates, split open and place on baking parchment.
2. Place more baking parchment on top and with a rolling pin, squashing to create a layer of dates.
3. Top with almond butter, spreading to the edges.
4. Heat chocolate of your choice and pour on top of the butter.
5. Scatter with either goji berries and/or chopped pistachios.
Chill and enjoy.
