RECIPE: Elderberry Gummies

Barbara Wilkinson shares a recipe for elderberry gummies, a perfect treat to make with this late summer herb.


  • 100gm Fresh Elderberries
  • ½ Stick Liquorice root
  • 2 Star anise
  • 1Tsp True Cinnamon
  • 1Tbs Dried Thyme or 2 Fresh
  • 400ml water
  • 2Tbs Unrefined Sugar or Honey
  • 4Tbs Agar-agar flakes
Put Elderberries, Thyme, spices and liquorice in a pan with 400ml of water. Bring to boil then simmer with a lid on, for 15 minutes.
Strain through a fine mesh such as muslin and then add back to a clean pan, adding the sweetener of choice. Leave the liquid to cool.
Sprinkle the Agar agar flakes on and return to boil but do not stir. Reduce heat and simmer 10minutes.
Pour into silicone moulds and leave to set, they are easy to remove once set.
If stored in an airtight container they will keep for a week in the fridge.
Enjoy as required for immune supporting properties, coughs, colds and viruses, but they also assist the digestive system and are mildly laxative. The dose can be varied according to individual needs.
